Stuffed Acorn Squash


2 medium acorn squash, halved and seeds removed

4 slices bacon, diced

1 medium onion, trimmed and diced

1 Granny Smith apple, peeled, cored, and diced

1 pound ground beef

1/4 cup packed dark brown sugar

1 tsp pumpkin pie spice

1/2 tsp dried sage

1/4 tsp salt

1/4 tsp pepper

2 tbsp dry breadcrumbs 


Preheat the oven to 350 degrees

Place squash face down in a rimmed dish

Add 2 cups of water to dish and bake at 350 degrees for 40 minutes

Cook bacon in a large skillet over medium heat for 4 minutes

Add onion and apple - Cook for 4 minutes

Stir in ground beef - Cook for 5 minutes

Add brown sugar and spices - Cook for 1 minute

Remove from heat and add breadcrumbs

Drain water from baking dish and flip over squash

Spoon meat mixture into the squash

Return to oven and bake 350 degrees for 20 minutes
