Ingredients
1 tsp baking powder
1 tsp baking soda
1/2 cup old-fashioned or quick-cooking oats
1/2 cup (1 stick) butter
3/4 cup firmly packed brown sugar
1/2 cup sugar
1 egg
1 tsp vanilla extract
1 cup Raisin Bran cereal
1 1/4 cup coconut flakes
1/2 cup raisins
Directions
Preheat the oven to 350 degrees
Mix flour, baking powder, baking soda, and oats in a bowl
Beat the butters and sugars in a large bowl until light and fluffy
Add egg and vanilla and mix well
Gradually add the flour mixture and beat until well-blended
Add cereal, coconut, and raisins
Drop by spoonful onto ungreased baking sheets
Bake 14-16 minutes or until lightly browned
Cool on baking sheet for 4 minutes
Remove onto wire racks
**Can substitute Honey Bunches of Oats and dried cranberries for Raisin Bran and raisins
