Skinny Chicken Parmesan

INGREDIENTS:

4 chicken breasts (about 8 oz each) - Sliced in half to make 8 pieces

3/4 cup seasoned bread crumbs

1/4 cup grated Parmesan cheese

2 tbsp butter, melted (or olive oil)

3/4 cup reduced fat mozzarella cheese

1 cup marinara sauce

 

DIRECTIONS:

Preheat oven to 450 degrees.  

Combine bread crumbs and Parmesan cheese in a bowl.  

Brush butter onto chicken and then dip into bread crumb mixture.

Place on baking sheet and repeat with all chicken.

Spray a little more oil on top of chicken and bake in the oven for 25 minutes.

Remove from oven and spoon 1 tbsp of sauce over each piece of chicken.

Top with 1 1/2 tbsp of shredded mozzarella cheese.

Bake for 5 more minutes or until cheese is melted.
